Elevate traditional hummus with a refreshing citrus twist.
Ingredients:
  • 2 x 420g cans chickpeas, drained
  • 113.75 gm extra virgin olive oil
  • 2 large oranges, rind finely grated, juiced
  • 3 garlic cloves, crushed
  • 10.00 gm ground cumin
  • pinch of cayenne pepper
  • 48.00 gm tahini
  • 3 bunches asparagus, trimmed
  • Savoury biscuits, to serve
Instructions:
  • In a food processor, combine chickpeas, oil, lemon zest, 1/2 cup lemon juice, garlic, cumin, cayenne pepper, and tahini. Blend until creamy. Season with salt and pepper to taste. Transfer the hummus to an airtight container and refrigerate until ready to use.
  • Fill a frying pan halfway with water and bring to a boil. Add the asparagus and cook for 2 to 3 minutes until vibrant green and slightly tender. Drain and then quickly cool down under cold water before storing in an airtight container in the refrigerator.
  • Present the hommus alongside fresh asparagus spears and savory biscuits for a delightful picnic spread.
