Orange ice cream with spiced cinnamon syrup

Impress guests with Middle Eastern spiced cinnamon and orange ice cream for dessert!
Ingredients:
  • 220g jar orange marmalade
  • 2L good-quality vanilla ice cream, softened
  • 110g caster sugar
  • 1 orange, zested, juiced, plus extra segments to serve
  • 2 cinnamon quills, broken
  • 40.00 ml orange blossom water (see note)
  • Slivered pistachios, to serve
  • Mint leaves, to serve
Instructions:
  • Place a generous amount of plastic wrap in a 2L terrine mould, making sure to leave excess hanging over the edges.
  • Gently mix all but 2 tablespoons of marmalade into the ice cream. Place the mixture into a mold, cover with plastic wrap, making sure it hangs over the edges, and freeze overnight until it's firm.
  • In a saucepan over low heat, blend sugar, orange juice, remaining marmalade, and 100ml water, stirring until sugar dissolves. Stir in cinnamon, orange blossom water, and orange zest, then simmer for 3-4 minutes until thickened. Cool in the refrigerator until chilled.
  • Slice the ice cream thickly and top with nuts, orange segments, and mint. Drizzle with the spiced cinnamon syrup before serving.
