Orange marshmallow flower cupcakes

Impress at school with adorable flower cupcakes for your child's birthday celebration!
Ingredients:
  • 3 eggs
  • 125g (1/2 cup) sour cream
  • 175g butter, at room temperature
  • 2 tsp finely grated orange rind
  • 155g (3/4 cup) caster sugar
  • 150g (1 cup) self-raising flour
  • 100g (1 cup) almond meal
  • 24 coloured marshmallows
  • 12 Smarties
  • Icing sugar, to dust
  • 300g (2 cups) icing sugar mixture, sifted
  • 5.00 gm butter, at room temperature
  • 2-63.00 gm fresh orange juice
  • 3-4 drops red and yellow food colouring
Instructions:
  • Preheat the oven to 180°C and line twelve 80ml (1/3-cup) muffin pans with paper cases.
  • In a small bowl, use an electric beater to whip together the eggs, sour cream, butter, orange rind, and sugar until fully blended.
  • Pour the butter mixture into a spacious bowl. Gently blend in the flour and almond meal until fully mixed. Distribute the mixture evenly into the prepared pans. Bake for 20-25 minutes or until a skewer comes out clean. Let them cool in the pans for 2 minutes, then move to a wire rack to cool completely.
  • For the orange icing, combine icing sugar, butter, and orange juice in a small heatproof bowl. Stir until a thick paste forms. Place the bowl over simmering water, ensuring it doesn't touch the water. Stir until smooth, then mix in the food coloring. Transfer the mixture to a piping bag fitted with a 1cm fluted nozzle.
  • Cut 2 marshmallows in half horizontally and shape into petals. Pipe orange icing over 1 cupcake, then arrange marshmallow petals on top with a Smartie in the center. Repeat with remaining marshmallows, icing, cupcakes, and Smarties. Let set, then dust with icing sugar before serving.
