Orange polenta cake with honey syrup

Make a delicious orange polenta bake with olive oil.
Ingredients:
  • 225.00 gm self-raising flour
  • 50.00 gm almond meal (ground almonds)
  • 75.00 gm polenta
  • 2 tsp finely grated orange rind
  • 86.63 gm orange juice
  • 57.20 gm honey
  • 113.75 gm extra-light olive oil
  • 125.00 ml flaked almonds
  • Double cream, to serve
  • 89.38 gm honey
  • 131.25 gm orange juice
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, then prepare your 20cm x 30cm lamington pan by greasing it and lining it with baking paper, leaving a slight overhang on all sides.
  • In a bowl, mix together the flour, sugar, almond meal, and polenta. Add in the orange rind, orange juice, egg, honey, and oil. Stir until well combined. Transfer the mixture into the prepared pan and smooth the top with a spatula. Sprinkle with almonds before baking.
  • Bake for 20 minutes or until a skewer inserted in the center comes out clean.
  • Prepare the syrup by combining honey, juice, and 1/4 cup of cold water in a microwave-safe jug. Microwave on high for 1 minute or until well combined and heated, stirring halfway through with a metal spoon. Drizzle half of the syrup over the cake.
  • Drizzle remaining syrup over the cake and generously dollop with double cream.
