Polenta Cake with Orange Sauce

Delicious polenta cakes infused with rum, lemon, and orange flavors, served with a tangy orange sauce.
Ingredients:
  • 0.75 cup unsalted butter, softened
  • 1 cup white sugar
  • 5 eggs
  • 7 tablespoons polenta
  • 5 teaspoons baking powder
  • 5 tablespoons rum
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons freshly squeezed orange juice
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 cups orange juice
  • 3 tablespoons orange marmalade
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C), then generously grease a 9-inch springform pan and dust it with flour.
  • In a bowl, cream together butter and sugar until light and fluffy using an electric mixer. In another bowl, beat eggs until frothy and then stir into the butter-sugar mixture.
  • Sift together flour, polenta, and baking powder, then gently fold into the batter. Stir in rum, lemon juice, orange juice, lemon zest, and orange zest. Transfer the batter to the prepared springform pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover with aluminum foil.
  • Allow the dish to cool on a wire rack for 5 minutes, then gently loosen the edges with a table knife and transfer it carefully onto a serving plate or cooling rack. Let it cool completely.
  • Combine the orange juice and orange marmalade in a saucepan and simmer over low heat for 5 to 10 minutes until thickened. Drizzle the resulting orange sauce over sliced cake.
