Ingredients:
  • Zest of 2 oranges
  • 20g unsalted butter
  • 125ml milk
  • 82.50 ml poppy seeds
  • 180g softened unsalted butter
  • 220g caster sugar
  • 4.40 gm vanilla extract
  • 3 eggs
  • Finely grated zest of 3 oranges
  • 250.00ml orange juice
  • 375g plain flour
  • 8.00 gm baking powder
  • 55g caster sugar
Instructions:
  • Preheat your oven to 200°C. Grease a 24cm cake pan and line the base with parchment paper.
  • Combine milk and poppy seeds in a bowl and let it sit for 20 minutes.
  • In the bowl of an electric mixer, cream together butter, sugar, and vanilla until light and pale. Beat in eggs one at a time, mixing well after each addition. Carefully fold in zest, juice, and poppyseed mixture. Sift in flour and baking powder, then gently fold in. Transfer batter into a pan and bake for 45-50 minutes until a skewer comes out clean. Let the cake cool in the pan for 5 minutes before flipping it onto a plate.
  • In a pan over medium heat, combine syrup ingredients and stir until sugar dissolves and butter melts. Increase heat to high and simmer for 2 minutes. While cake is warm, use a skewer to poke holes on top, then drizzle with the hot syrup and zest. Enjoy warm or cold.
