Orange-Poppy Seed Cake

Delicious glazed cake, quick and easy to prepare.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 tablespoon grated orange peel
  • 1/2 cup water
  • 1/2 cup orange juice
  • 1/2 cup vegetable oil
  • 3 eggs
  • 2 tablespoons poppy seed
  • 1 cup powdered sugar
  • 1/4 teaspoon grated orange peel
  • 1 to 2 tablespoons orange juice
  • Additional grated orange peel, if desired
Instructions:
  • Preheat your oven to 350°F (or 325°F for a dark or nonstick pan). Prepare a 12-cup fluted tube cake pan by greasing and lightly flouring it, or simply spray it with baking spray that includes flour.
  • In a large bowl, use an electric mixer to blend cake mix, 1 tablespoon of orange peel, water, 1/2 cup of orange juice, oil, and eggs. Mix on low speed for 30 seconds, then increase to medium speed for 2 minutes, scraping the bowl occasionally. Add poppy seeds and pour the batter into the pan.
  • Follow the baking instructions on the box for a 12-cup fluted tube pan. Let it cool for 15 minutes, then remove from the pan onto a cooling rack or heatproof serving plate. Allow to cool completely for about 2 hours before serving.
  • Mix powdered sugar, 1/4 teaspoon orange peel, and 1 tablespoon orange juice in a small bowl until smooth. Gradually stir in orange juice, 1 teaspoon at a time, until the glaze reaches a thick syrup consistency. Spread over cake, letting it drizzle down the sides. Garnish with extra orange peel and store covered loosely.
