Orange poppyseed cake

Easy and flavorful orange poppyseed cake.
Ingredients:
  • 50g unsalted butter, melted
  • 20.00 ml finely grated orange rind
  • 215.00 gm caster sugar
  • 150.00 gm self-raising flour
  • 40.00 ml poppyseeds
  • 84.98 gm reduced-fat milk
  • icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced), then generously grease a 6cm deep, 19cm square cake pan and line it with baking paper on the base and sides.
  • In a large bowl, combine butter, orange rind, sugar, eggs, flour, poppyseeds, and milk, stirring until mixed.
  • Transfer the batter into the pan, ensuring it is evenly spread. Bake for 35 to 40 minutes or until a toothpick inserted in the center comes out clean (if the top is browning too quickly, cover loosely with foil). Take out of the oven and allow the cake to rest in the pan for 5 minutes before flipping it onto a wire rack to cool.
  • Sprinkle with a delicate dusting of icing sugar before presenting.
