Orange sour cream cake

Irresistible spring fundraiser treat that will fly off the table.
Ingredients:
  • Melted butter, to grease
  • 160g butter
  • 140g (2/3 cup) caster sugar
  • 8.80 gm vanilla essence
  • 40g (1/4 cup) plain flour
  • 170g (2/3 cup) sour cream
  • 20.00 ml finely grated orange rind
  • 80ml (1/3 cup) fresh orange juice
  • 215g (1 cup) caster sugar
  • 3 oranges, rind cut into long thin strips
  • 60ml (1/4 cup) water
  • 150g (1 cup) pure icing sugar, sifted
  • 20g butter, at room temperature
  • 21.00 gm fresh orange juice
Instructions:
  • Preheat your oven to 180°C. Grease a 20cm round cake pan with melted butter and line the bottom with non-stick baking paper.
  • In a small bowl, use an electric beater to mix the butter and sugar until pale and creamy. Add eggs one at a time, beating well after each addition. Mix in the vanilla. Transfer to a large bowl. Gently fold in the combined flours, sour cream, orange rind, and orange juice in alternating batches using a large metal spoon until smooth. Pour into prepared pan and bake for 50-55 minutes until a skewer comes out clean. Cool in the pan.
  • For the candied rind: Set up a wire rack over a baking tray. Quickly blanch the orange rind in boiling water for 10 seconds, then drain. Combine sugar and water in a saucepan over low heat until sugar dissolves. Increase heat, bring to a boil, then lower to medium-low. Add orange rinds to the syrup. Simmer without stirring for 5-10 mins until rind is slightly see-through. Use tongs to move rind to the wire rack to cool and set.
  • For the orange icing, combine icing sugar, butter, and orange juice in a heatproof bowl. Beat with a wooden spoon until smooth. Set the bowl over simmering water, stirring until the icing is warm. Let it cool slightly before using.
  • Place the cake on a stylish serving plate, drizzle the luscious icing over it, and let it sit until perfectly set. Finally, adorn it with the tantalizing candied rind for a delightful finish.
