Orange almond sour cream cake

Try a tangy orange almond sour cream cake for a perfect afternoon treat.
Ingredients:
  • 250g butter, softened
  • 322.50 gm caster sugar
  • 1 orange, rind finely grated, juiced
  • 4 eggs, at room temperature
  • 117.50 gm sour cream
  • 225.00 gm self-raising flour
  • 100g almond meal (ground almonds)
  • 50g slivered almonds, toasted
  • 250g cream cheese, softened
  • 1 large orange, rind finely grated
  • 49.50 gm pure icing sugar, sifted
Instructions:
  • Preheat your oven to 170C and prepare a 6cm deep, 22cm round springform cake pan by greasing and lining the base.
  • With an electric mixer, whip together butter, sugar, and orange zest until fluffy. Incorporate eggs one by one, making sure to mix well after each addition. Gently fold in sour cream. Sift flour over the mixture and stir until combined. Mix in almond meal and 2 tablespoons of orange juice until smooth.
  • Pour the mixture into the prepared pan and bake for 1 to 1 1/4 hours, or until a skewer inserted into the center comes out clean. Let it sit in the pan for 5 minutes, then remove the sides. Allow it to cool completely on a wire rack.
  • Prepare orange icing: With an electric mixer, blend cream cheese and orange zest until smooth. Incorporate powdered sugar and mix on low until combined.
  • Cut the cake in half using a serrated knife. Place one half on a cake platter. Spread one-third of the icing over the base. Place the other half of the cake on top. Spread the rest of the icing over the cake. Sprinkle with slivered almonds. Serve and enjoy!
