Orange-Berry Pavlova

Impressive pavlova topped with orange cream and fresh berries, perfect for special occasions.
Ingredients:
  • 6 egg whites, room temperature
  • 0.5 teaspoon cream of tartar
  • 1 pinch salt
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 1.5 tablespoons cornstarch
  • 2 cups heavy whipping cream
  • 1 large orange, zested
  • 1 large orange, peeled and sliced
  • 0.75 cup mixed fresh berries
Instructions:
  • Preheat the oven to 250 degrees F (120 degrees C). Trace a 9-inch circle on a large sheet of parchment paper. Place the parchment on a baking sheet with the circle side facing down and in the center.
  • Using an electric mixer, whip egg whites, cream of tartar, and salt until soft peaks form. Gradually add sugar, followed by vanilla and almond extracts, beating until stiff peaks form. Sift in cornstarch and gently fold until just combined.
  • Gently spread the egg mixture onto the parchment paper in a round shape, creating a slightly raised edge and an impression in the center for the perfect meringue shape.
  • Bake the pavlova in the preheated oven until firm and dry to the touch, for 1 to 1 1/2 hours. Turn off the oven without removing the pavlova and let it cool inside for at least 1 hour.
  • In a large bowl, pour in the heavy whipping cream and beat at medium-high speed until soft peaks form. Incorporate the orange zest and vanilla extract, continue beating until well combined.
  • Carefully lift the pavlova base off the parchment paper and transfer it to a serving tray. Garnish with whipped cream, orange slices, and mixed berries. Serve promptly.
