Citrusy, spicy broiled shrimp with zesty ginger.
Ingredients:
  • 1/2 cup vegetable oil
  • 1/4 cup vinegar
  • 1/4 cup frozen (thawed) orange juice concentrate
  • 1 tablespoon chopped red onion
  • 2 teaspoons grated gingerroot
  • 3/4 teaspoon crushed red pepper flakes
  • 1 lb deveined shelled uncooked medium shrimp
  • 5 bamboo skewers (12 inch)
Instructions:
  • Blend all ingredients in the blender until smooth, excluding the shrimp.
  • Place the shrimp in a large resealable plastic bag. Pour the oil mixture over the shrimp and let it marinate at room temperature for 15 minutes. Meanwhile, soak bamboo skewers in water.
  • Remove shrimp from marinade and thread them onto bamboo skewers. Arrange the skewers on a non-stick cookie sheet.
  • Broil the shrimp skewers 6 inches from the heat for 3 to 5 minutes, flipping once, until the shrimp are pink. Cut each skewer into 3 pieces using kitchen scissors.
