Orecchiette pasta cradles lentils and cheese for a comforting Italian dish.
Ingredients:
  • 110g (1/2 cup) French green lentils
  • 400g orecchiette pasta
  • 180ml (3/4 cup) olive oil
  • 1 large red onion, halved, sliced
  • 3 garlic cloves, finely chopped
  • 1-2 long fresh red chillies, sliced
  • 3 tsp finely chopped fresh rosemary
  • 1000.00 ml baby kale leaves
  • 70g vegetarian hard cheese or parmesan, finely grated
  • Shaved vegetarian hard cheese or parmesan, to serve
Instructions:
  • Simmer the lentils in boiling water for 30 minutes until they are tender, then drain them.
  • Cook the pasta in a large saucepan of boiling water according to the package instructions. Drain and return to the pan.
  • As the pasta boils, warm the oil in a spacious skillet on low heat. Sauté onion, garlic, chili, and rosemary for 5 minutes until softened. Combine with the cooked pasta, lentils, kale, and Parmesan. Gently toss together, season generously, and top with shaved Parmesan.
