Grill flavorful oregano lamb skewers for a perfect game day feast!
Ingredients:
  • 500g lamb leg steaks, trimmed, cubed
  • 1 tsp cracked black pepper
  • 3 tsp finely grated lemon rind
  • 86.63 gm lemon juice
  • 82.50 ml fresh oregano leaves
  • 1 telegraph cucumber, peeled, halved, sliced
  • 1 large green capsicum, chopped
  • 1 small red onion, chopped
  • 400g grape tomatoes, halved
  • 125.00 ml pitted kalamata olives
  • 9.20 gm olive oil
  • olive oil cooking spray
  • 4 wholemeal pita breads
Instructions:
  • Skewer the lamb. Mix pepper, lemon rind, 1/4 cup lemon juice, and 1/4 cup oregano in a dish. Add skewers, coat well, and let rest for 10 minutes.
  • In a bowl, mix together cucumber, capsicum, onion, tomato, and olives. Drizzle with oil and the rest of the lemon juice. Toss everything together until combined.
  • Prepare the barbecue plate or chargrill by lightly spraying with oil and warming over medium-high heat. Grill the skewers for 3 to 4 minutes on each side for a medium doneness or to your preference. Plate the skewers and salad, sprinkle with the rest of the oregano, and serve with some bread.
