Elevate cocktails and drinks with Orgeat, a sweet almond syrup that adds nutty and floral notes to Mai Tais, whiskey cocktails, and iced coffee.
Ingredients:
  • 2 cups (10 ounces) raw almonds
  • 2 cups water, filtered
  • 2 cups sugar
  • 1/4 teaspoon orange flower water
  • 1 ounce vodka, optional
Instructions:
  • Crush almonds: Use a food processor to pulse the almonds or wrap them in a towel and crush with a rolling pin until broken into smaller pieces, ensuring they are not pulverized.
  • Soak almonds in water: Place almonds in a medium bowl, add water, cover loosely with a clean dishtowel, and refrigerate for 8 hours or overnight.
  • Strain almond liquid into a saucepan using a nut milk bag or cheesecloth, ensuring no almond bits remain.
  • To make almond syrup, heat almond liquid on medium-high until gently simmering. Whisk in sugar until dissolved, then simmer for 5-8 minutes until medium bubbles form. Avoid vigorous boiling.
  • Chill the liquid, then stir in the orange flower water and vodka: Refrigerate the mixture until it reaches room temperature. Once chilled, gently mix in the orange flower water and vodka if desired.
  • Keep orgeat fresh: Store orgeat in an airtight container in the fridge. Without vodka, it lasts for a month; with vodka, up to three months.
