Creamy orzo and broccoli salad tossed in tangy cheeses and herb-infused olive oil dressing, a delicious side dish for any meal.
Ingredients:
  • 1.5 cups uncooked orzo pasta
  • 1 bunch fresh broccoli, cut into florets
  • 0.25 cup olive oil
  • 3 tablespoons pine nuts
  • 0.5 teaspoon crushed red pepper flakes
  • 0.75 cup sliced black olives
  • 0.25 cup chopped fresh basil
  • 3.5 ounces crumbled feta cheese
Instructions:
  • 1. Boil a large pot of lightly salted water. Cook orzo for 8 minutes. Add broccoli florets and cook for 2 more minutes until tender. Drain and transfer to a large bowl.
  • In a skillet over gentle heat, warm olive oil. Toast pine nuts until golden, around 3 minutes. Sprinkle in red pepper flakes; sauté until fragrant, about 30 seconds. Take off the heat and drizzle over the orzo.
  • Mix orzo gently until fully coated with the flavorful oil mixture. Then, fold in olives, Parmesan cheese, fresh basil, and tangy feta cheese. Give everything a final toss and season the dish to perfection with salt and pepper.
