This recipe yields a generous portion loved by all. Easily halve it for fewer servings.
Ingredients:
  • 0.33333334326744 cup chopped walnuts
  • 3 tablespoons olive oil
  • 2 onions, chopped
  • 1 pound fresh mushrooms, sliced
  • 4 cups chicken broth
  • 2 cups uncooked orzo pasta
  • salt and pepper to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet and bake for 8 to 10 minutes until fragrant, giving them a stir once or twice for even toasting.
  • In a large heavy saucepan over medium-high heat, cook onion and mushrooms in oil until they are tender and golden brown.
  • Bring broth to a boil, then add the orzo. Reduce heat, cover, and simmer for 15 minutes until orzo is tender and liquid is absorbed. If needed, uncover and cook until liquid is gone. Stir in walnuts, season with salt and pepper. Enjoy!
