Stuffed tri-colored peppers with chicken, orzo, portobello mushrooms, and green onions for a delicious and satisfying meal.
Ingredients:
  • cooking spray
  • 1 green bell pepper - halved, seeded, and stem removed
  • 1 red bell pepper - halved, seeded, and stem removed
  • 1 yellow bell pepper - halved, seeded, and stem removed
  • 1 tablespoon butter
  • 3 green onions, sliced
  • 4 cloves garlic, minced
  • 2 skinless, boneless chicken breast halves, cut into 1/2-inch cubes
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 cup orzo
  • 1 (16 ounce) can chicken broth
  • 3 tablespoons Parmesan cheese
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • 2 portobello mushrooms, thinly sliced
  • 1 green onion, thinly sliced
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Coat the interior of green, red, and yellow bell pepper halves with cooking spray and arrange them on a baking sheet.
  • Roast the peppers in the preheated oven until just tender, for around 10 minutes.
  • In a skillet over medium heat, melt 1 tablespoon butter with 2 tablespoons oil. Sauté 3 green onions and garlic until fragrant, about 2 to 3 minutes. Add chicken, black pepper, and cumin; cook until chicken is cooked through, about 4 to 5 minutes. Stir in orzo and chicken broth, simmer until orzo is tender yet firm, and broth is absorbed, approximately 11 minutes. Fill bell peppers with the chicken-orzo mixture and top with Parmesan cheese before serving.
  • Bake until the cheese is gooey and melted in the preheated oven for about 7 minutes.
  • In a skillet, heat a tantalizing mix of 1 teaspoon of oil and 1 teaspoon of butter. Sauté the portobello mushrooms and the rest of the green onion until tender, for approximately 5 minutes. Season with a pinch of salt and a dash of black pepper. Generously spoon around 2 tablespoons of the savory mushroom mixture into each stuffed bell pepper.
