Summertime one-pot dinner with vibrant caprese salad flavors on orzo and chicken. Quick, easy, and perfect for weeknights - a family favorite in under an hour!
Ingredients:
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1 cup uncooked orzo or rosamarina pasta
  • 1 package (8 oz) fresh mozzarella pearls, drained
  • 1/4 cup shredded fresh basil leaves
Instructions:
  • Season chicken with a sprinkle of 1/2 teaspoon salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Sear chicken for 3 to 4 minutes per side until golden brown. Transfer chicken from skillet.
  • Bring the broth, tomatoes, and 1/2 teaspoon salt to a boil. Add the pasta and chicken, then simmer covered for 12 to 16 minutes until the pasta is tender and the chicken reaches an internal temperature of at least 165°F.
  • Sprinkle mozzarella pearls over the mixture, cover, and cook over medium-low heat for 2 to 4 minutes until the mozzarella slightly melts. Finish with a sprinkle of basil.
