Caprese chicken recipe for two

Easy and quick one-pan chicken dinner ready in just 15 minutes - ideal for busy weeknights!
Ingredients:
  • 1/2 French shallot, finely chopped
  • 1 garlic clove, crushed
  • 18.20 gm extra virgin olive oil
  • 40.00 ml fresh basil leaves, plus 40.00 ml finely chopped, extra
  • 1 large (about 350g) chicken breast fillet, halved lengthways
  • 150g mixed baby tomatoes, halved
  • 2 (about 70g) bocconcini, sliced
  • 2 tsp red wine vinegar
  • 1.25 gm caster sugar
  • Crusty bread, to serve
Instructions:
  • In a bowl, mix together shallot, garlic, 2 tsp of oil, and extra basil. Season to taste. In a large ovenproof non-stick frying pan, heat the remaining oil over medium-high heat. Season the chicken and cook, turning occasionally, for 4 minutes until browned. Remove the pan from the heat.
  • Preheat the oven grill to high. Scatter tomatoes around the chicken. Spread chicken with half of the basil mixture. Top with bocconcini and spoon over the remaining basil mixture. Drizzle tomatoes with vinegar, sprinkle with sugar, and season to taste. Grill for 4 minutes or until the cheese melts and tomatoes blister. Garnish with the remaining basil. Serve with bread.
