Delicious, simple, one-pan meal for easy cleanup.
Ingredients:
  • 1 bunch Perfection Fresh broccolini, washed and halved crossways
  • 2.50 gm smoked paprika
  • 6 skinless chicken thigh fillets, trimmed
  • 54.60 gm olive oil
  • 16.00 gm brown sugar
  • 400g can cherry tomatoes
  • 8 traditional bocconcini
  • 125.00 ml parsley leaves
  • Chargrilled garlic bread slices, to serve
Instructions:
  • Season both sides of the chicken with a flavorful blend of paprika, salt, and pepper. Heat a tablespoon of oil in an ovenproof frying pan over medium-high heat. Sear the chicken in batches for 3-4 minutes until beautifully golden. Transfer to a plate and get ready to enjoy a delicious meal!
  • Lower the heat to medium. Incorporate the rest of the oil, onions, and garlic into the pan. Sauté for 2 minutes. Pour in the vinegar and sugar, and continue stirring for another 2 minutes until slightly thickened. Introduce the can of cherry tomatoes and bring to a gentle simmer. Place the chicken back into the pan.
  • Place a piece of parchment paper on top of the pan and secure it with a lid. Cook over medium-low heat for 10 minutes. Add olives and Perfection Fresh broccolini, then place the parchment paper back on top to cover. Cook for an additional 3-4 minutes until the broccolini turns vibrant green. Uncover before serving.
  • Preheat the grill to medium-high heat. Sprinkle bocconcini evenly over the chicken and grill for 3-4 minutes until the cheese is softened. Garnish with parsley and serve alongside garlic bread.
