Caramelized baked apples elevate juicy pork chops.
Ingredients:
  • 1 large red onion, cut into wedges
  • 2 large Pink Lady apples, halved crossways
  • 4 Pork Forequarter Chops
  • 18.20 gm extra virgin olive oil
  • 20.00 ml balsamic vinegar
  • Steamed broccolini, to serve
  • Coles Crème Royal Mashed Potato, to serve
  • Flat-leaf parsley, chopped, to serve
Instructions:
  • Preheat your oven to 200C and gently grease a roasting pan.
  • Spread a layer of onion and apple in the pan. Lay the pork on top. Mix oil, vinegar, and garlic in a bowl, then pour over the pork. Bake for 30 minutes until pork is cooked and apple is tender. Season to taste.
  • Distribute the broccolini and mashed potatoes evenly onto serving plates. Spoon the pork mixture on top and garnish with a sprinkle of fresh parsley before serving.
