Try this Bisquick Heart Smart® one-pan meal with savory meat, veggies, and sweet cinnamon apples for a flavorful twist!
Ingredients:
  • 1/4 cup packed brown sugar
  • 1 tablespoon firm margarine or butter, cut up
  • 1/2 teaspoon ground cinnamon
  • 1/2 small acorn squash
  • 1 small unpeeled red cooking apple
  • 1/3 cup Bisquick Heart Smart® mix
  • 1/2 teaspoon seasoned salt
  • 1/8 teaspoon pepper
  • 5 saltine crackers, crushed
  • 1 egg white or 2 tablespoons fat-free egg product
  • 1 tablespoon water
  • 3 boneless pork loin chops, 1/2 inch thick (3/4 lb)
Instructions:
  • Preheat the oven to 350°F. Combine brown sugar, margarine, and cinnamon in a small bowl until crumbly; set aside. Slice the squash into 1/2-inch rings, then cut the rings in half and remove the seeds. Chunk the apple into pieces.
  • Combine Bisquick® mix, seasoned salt, pepper, and cracker crumbs in one dish. In a separate dish, whisk together egg white and water. Dip pork in egg mixture, then coat with Bisquick mixture for a delightful crunch.
  • Prepare a 10-inch skillet by spraying it with cooking spray and heating it over medium-high heat. Sear the pork in the skillet for 6 to 8 minutes, flipping it once, until the coating turns golden brown.
  • Place the pork in a baking dish without greasing it. Surround the pork with the squash and apples, then sprinkle the brown sugar mixture over everything. Bake without covering for 40 to 45 minutes until the squash is tender and the pork is cooked through.
