Irresistible baked pork with fruits and vegetables – a comforting delight!
Ingredients:
  • 2 tablespoons firm butter or margarine, cut up
  • 1 teaspoon ground cinnamon
  • 1 small acorn squash
  • 1 large unpeeled red cooking apple
  • 3/4 cup Original Bisquick™ Baking Mix
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 9 saltine crackers, crushed
  • 1 egg
  • 2 tablespoons water
  • 6 pork boneless loin chops, 1/2 inch thick (1 1/2 pounds)
Instructions:
  • Preheat oven to 350°F. Combine brown sugar, butter, and cinnamon until crumbly; set aside. Slice squash into 1/2-inch rings, discarding seeds. Dice apple into chunks.
  • Combine Bisquick, seasoned salt, pepper, and cracker crumbs in a bowl. In a separate bowl, mix the egg and water. Dip the pork into the egg mixture, then coat with the Bisquick mixture.
  • Prepare a 10-inch nonstick skillet by spraying it with cooking spray and heating it over medium-high heat. Cook the pork in the skillet for 6 to 8 minutes, flipping it over once, until the coating turns brown.
  • In a 13x9x2 inch rectangular baking dish, lay out the pork without greasing the dish. Surround the pork with squash and apples. Sprinkle the brown sugar mixture over everything. Bake the dish uncovered for 40 to 45 minutes until the squash is tender and the pork is slightly pink in the center.
