Pork with Apple and Parsnips

Tangy mustard and warming allspice enhance this flavorful one-pan meal of pork chops, parsnips, onions, and apples.
Ingredients:
  • 4 pork loin or rib chops, about 1/2 inch thick (1 pound)
  • 3 medium parsnips, cut crosswise into 1/2-inch slices
  • 1 medium onion, sliced
  • 1/2 cup Progresso™ chicken broth (from 32-ounce carton)
  • 1 teaspoon ground mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon pepper
  • 1 medium apple, cut into 1/4-inch wedges
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Trim the excess fat from the pork. Sear the pork in a 10-inch nonstick skillet over medium heat, flipping it once, until golden brown; then drain off any excess fat.
  • Lay the parsnips and onion over the pork. Combine broth, mustard, salt, allspice, and pepper; pour over the pork and vegetables. Bring to a boil, then simmer covered for about 30 minutes until the pork chops are slightly pink near the bone.
  • Place the apple slices on top of the vegetables in the pan. Cover and let it simmer for about 3 minutes until the apple slices are just tender. Finish off by sprinkling with fresh parsley.
