Indulge in savory sage and cider pork roast paired with silky mashed potatoes.
Ingredients:
  • 9.60 gm sea salt flakes
  • 20.00 ml fresh sage, finely chopped
  • 2kg Pork Leg Roast Boneless
  • 4 parsnips, peeled, quartered
  • 375ml apple cider
  • 4 pink lady apples, quartered
  • 82.50 ml sage leaves
  • Mashed potato, to serve
  • Steamed baby broccoli, to serve
Instructions:
  • Preheat the oven to 230C. Mix salt and sage in a small bowl. Use the salt mixture to season the pork rind and massage it into the cuts.
  • In a spacious roasting pan, place the pork and roast until the rind crackles, approximately 30 minutes. Lower the oven temperature to 180C. Add parsnip and cider to the pan, and continue roasting for another 1 hour and 15 minutes. In the last 30 minutes of cooking, introduce the apple and sage to the pan.
  • Cover the pork with foil and let it rest for 20 minutes. Serve sliced with parsnip and apple mash, baby broccoli, and pan juices.
