This easy pork roast recipe is perfect for sharing with loved ones.
Ingredients:
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1.5kg boneless pork leg roast (see Notes)
  • 18.20 gm extra virgin olive oil
  • 9.60 gm sea salt
  • 255.00 gm chicken style liquid stock
  • 40.00 ml apple cider vinegar
  • 3 granny smith apples, peeled, cored, diced
  • 40.00 gm caster sugar
  • 20.00 ml fresh sage leaves, chopped
Instructions:
  • Preheat your oven to 220C/200C fan-forced, then prepare a greased wire rack in a large flameproof roasting pan.
  • Arrange fragrant rosemary and thyme on a wire rack, then lay the pork on top, skin side up, over the herbs. Gently pat the skin with a paper towel to remove any moisture. Drizzle the pork with oil, then generously sprinkle with salt.
  • Roast at high heat for 20 minutes, then lower the temperature to 180C/160C fan-forced and continue roasting for another 1 1/2 hours until the pork has a crisp, crackled rind and is cooked through. Transfer the pork to a plate, cover loosely with foil, and let it rest for 10 minutes before serving.
  • For the Chunky Apple and Sage Sauce: Combine apple, sugar, vinegar, and 2 tablespoons water in a saucepan over medium heat. Bring to a boil, then lower heat and simmer for 5 minutes. Stir in sage and continue to simmer until the sauce thickens, approximately 5 more minutes.
  • Take out the wire rack from the roasting pan and pour the pan juices through a strainer into a small jug. Remove any excess fat from the juices, keeping 1 1/2 tablespoons in the pan. Discard the rest of the fat. Place the roasting pan over high heat and sprinkle in the flour. Stir and cook for 2 to 3 minutes until the mixture is bubbling and turns golden. In a separate jug, combine the stock, vinegar, and the reserved pan juices. Gradually pour this mixture into the pan while stirring constantly. Continue to cook and stir for 4 to 5 minutes until the gravy is thickened and bubbling.
  • Slice the pork thinly and serve it with savory gravy and delicious apple sauce.
