Roast Pork with Apples and Sweet Potatoes

Delicious pork and apple dish elevated by sweet potatoes.
Ingredients:
  • 1/4 cup packed brown sugar
  • 6 tablespoons butter or margarine, melted
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 2 medium red cooking apples, sliced (about 2 cups)
  • 2 medium dark-orange sweet potatoes, peeled and thinly sliced (about 2 1/2 cups)
  • 1 medium onion, chopped (1/2 cup)
  • 2 pork tenderloins (1 lb each)
Instructions:
  • Preheat the oven to 425°F. Combine brown sugar, butter, vinegar, salt, garlic powder, and pepper in a medium bowl. Set aside 2 tablespoons of the butter mixture. Toss apples, sweet potatoes, and onion in the remaining butter mixture until evenly coated. Transfer the mixture to a roasting pan or a 13x9-inch (3-quart) glass baking dish. Cover tightly with foil and bake for 20 minutes.
  • Brush the pork with the flavorful butter mixture before heating a nonstick skillet over medium-high heat. Cook the pork in the skillet for about 3 minutes, turning to ensure all sides are evenly browned.
  • Lay the pork on top of the apple mixture. Bake in the oven without covering for 30 to 40 minutes, or until the pork is slightly pink in the middle and reaches an internal temperature of 160°F when tested with a meat thermometer.
