Juicy pork loin roast with apples, potatoes, sweet potatoes, and rich gravy.
Ingredients:
  • 2 pounds boneless pork loin roast
  • 4 medium red potatoes, peeled and sliced
  • salt and ground black pepper to taste
  • 3 medium sweet potatoes, peeled and sliced
  • 2 tablespoons ground cinnamon
  • 1 medium tart green apple - peeled, cored, and sliced
  • 0.5 cup butter, sliced
  • 0.5 cup milk
  • 0.5 cup water
  • 2 cubes chicken bouillon
  • 1 cube beef bouillon
  • 1 tablespoon cornstarch
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • In a medium baking dish, nestle the pork roast. Season red potatoes with salt and pepper, placing them around the roast. Toss sweet potatoes and cinnamon in a resealable plastic bag until coated, then scatter around the roast. Layer apple slices over the pork and potatoes, and finish by topping everything with slices of butter. Seal the baking dish tightly with foil before placing in the oven.
  • Roast in a preheated oven for 1 1/2 hours, or until the pork reaches an internal temperature of 145 degrees F (63 degrees C).
  • Combine milk, water, chicken bouillon, beef bouillon, and cornstarch in a saucepan over medium heat until bouillon dissolves and mixture thickens. Enjoy with the pork roast and potatoes.
