Roast pork with spiced apple gravy

"Juicy roast pork infused with sweet apples and aromatic spices."
Ingredients:
  • 2.5kg boned rolled loin of pork
  • 9.20 gm olive oil
  • 9.60 gm sea salt flakes
  • 12 small (about 100g each) red apples
  • 20g butter
  • 40g (1/4 cup) plain flour
  • 0.63 gm ground cinnamon
  • 1/4 tsp Chinese five spice
  • 250ml (1 cup) chicken style liquid stock
  • 125ml (1/2 cup) apple juice
  • 125ml (1/2 cup) dry white wine
  • Salt & freshly ground black pepper
Instructions:
  • Preheat oven to 220°C. Score pork rind crossways at 2cm intervals, then place rind-side up in roasting pan. Brush with oil and rub salt into cuts. Roast for 30 minutes until rind crackles. Reduce temperature to 180°C, add apples, and roast for 1 1/4 hours. Transfer to a platter, cover with foil, and let rest for 10 minutes before serving.
  • Pour the pan juices into a heatproof jug. Melt butter in the roasting pan over medium heat until foamy. Stir in flour, cinnamon, and Chinese five spice. Cook and stir for 2 minutes until bubbly. Slowly add pan juices, stock, apple juice, and wine. Cook for 5-6 minutes, scraping up any browned bits with a wooden spoon as the gravy boils. Season with salt and pepper, then strain into a heatproof jug.
  • Slice the pork thinly against the grain. Enjoy with delicious apples and savory gravy.
