Spice-crusted pork with apples

Ingredients:
  • 4.80 gm sea salt
  • 2.50 gm ground cumin
  • 1 1/2 tsp ground fennel
  • 1.5kg loin pork, rind on
  • olive oil spray
  • 1.5kg granny smith apples, peeled, cored and sliced
  • 18.00 gm white sugar
  • 165.00 gm water
Instructions:
  • Preheat your oven to 220°C. Mix together sea salt, cumin, and fennel in a small bowl.
  • Score the pork rind with a sharp knife, then drizzle with olive oil and massage in the spice mixture.
  • Place the pork in a generously greased roasting pan and roast at 220°C for 20 minutes, then lower the temperature to 180°C.
  • Place apples in the pan, generously sprinkle with sugar, and carefully pour water over them. Roast for 1 hour and 15 minutes, gently stirring the apples from time to time.
  • After baking the pork, cover it gently with foil and let it rest for 15 minutes before slicing. Accompany with fresh apples for a delightful presentation.
