"Juicy spiced pork roast with seasonal stone fruit instead of apples for a flavorful twist."
Ingredients:
  • 2 tsp fennel seeds
  • 100g pistachio kernels
  • 950g pork mini roast
  • 6 ripe plums
  • 36.40 gm olive oil
  • 1 baby endive, torn into sprigs
Instructions:
  • Preheat the oven to 180°C. Pulse the pistachios and fennel seeds in a food processor until coarsely ground.
  • Spread pistachio mixture onto non-stick baking paper, season with salt and pepper, then coat pork by rolling it in the mixture, pressing firmly to adhere. Spray with oil.
  • In a baking dish, carefully position the pork and surround it with plums. Drizzle oil over the pork and plums, then season the plums with salt and pepper. Bake in the oven for 40-45 minutes until the plums are tender and the pork is golden and fully cooked. Rest the pork covered with foil for 10 minutes before serving.
  • Slice the pork and arrange on serving plates with the plums. Serve alongside fresh endive leaves.
