Pistachio crusted broccolini with goat’s cheese

Flavorful broccolini and creamy goat cheese make the perfect side dish for any meal!
Ingredients:
  • 1 bunch broccolini, trimmed
  • 20g pistachios, coarsely chopped
  • 82.50 ml basil leaves, shredded
  • 20g marinated goats’ cheese
Instructions:
  • Steam broccolini over simmering water for 5 minutes until perfectly tender-crisp. Drain and set aside to keep warm.
  • Combine the pistachios and basil in a bowl, then toss with 1 tablespoon of the marinating oil. Halve the broccolini lengthwise and place on a serving plate. Sprinkle the pistachio mixture over the broccolini, add the crumbled goats’ cheese, drizzle with extra marinating oil, and season to taste.
