Asparagus spears coated in a sweet and nutty pistachio crust create a delicious and simple side dish.
Ingredients:
  • 2 cups shelled pistachio nuts
  • 2 tablespoons water
  • 2 pounds thick asparagus, shaved using a vegetable peeler
  • salt and ground black pepper to taste
Instructions:
  • Pulse pistachio nuts in a food processor until finely ground, then transfer to a plate.
  • Whisk eggs with water in a shallow bowl. Dip asparagus in the egg mixture, then coat with ground nuts. Arrange on a wire rack over a baking sheet. Season generously with salt and pepper.
  • While the pistachio crust sets, preheat the oven to 350 degrees F (175 degrees C) for about 15 minutes.
  • Roast in the oven until soft and golden, approximately 15 minutes.
