Impress guests with Chef John's elegant pistachio-crusted lamb rack. A delightful blend of sweet pistachios, zesty Dijon, and crispy bread crumbs elevates this dish for any special gathering.
Ingredients:
  • 2 racks of lamb, trimmed
  • 1 teaspoon herbes de Provence
  • 1 tablespoon vegetable oil
  • 0.66666668653488 cup chopped pistachio nuts
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon melted butter
  • 1 teaspoon olive oil
  • 3 tablespoons Dijon mustard
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a baking sheet lined with aluminum foil.
  • Season each rack of lamb liberally with aromatic herbes de Provence, salt, and pepper.
  • In a hot skillet with vegetable oil, sear lamb on all sides until golden brown, about 6 to 8 minutes. Then, move it to the baking sheet.
  • Combine pistachios, bread crumbs, melted butter, and olive oil in a small bowl, season with salt and pepper. Spread mustard on the fatty side of the lamb, then coat with the pistachio mixture.
  • Bake in the oven until the crust is golden and the lamb is pink in the center, about 20-25 minutes, or until an instant-read thermometer inserted into the center reads at least 130°F (54°C) for medium doneness.
  • Place the lamb onto a serving plate and allow it to rest for 10 minutes before cutting into slices.
