Roast pork with sweet plums and apples for a burst of seasonal flavors.
Ingredients:
  • 1.5kg Pork Shoulder Roast Boneless
  • 36.40 gm olive oil
  • 2.40 gm sea salt
  • 1 large red onion, cut into wedges
  • 500g baby white potatoes, halved
  • 500ml chicken stock
  • 2 Gala apples, halved
  • 4 plums
  • 20.00 ml apple cider vinegar
  • Steamed broccolini, to serve
Instructions:
  • Preheat the oven to 230C. Place the pork in a large flameproof roasting pan, skin-side up. Massage oil and salt all over the pork. Roast for 30 minutes.
  • Lower oven temperature to 200C. Combine onion, potato, and stock in the pan. Roast for 45 mins. Introduce apple and plums, roast for additional 15 minutes or until apple is tender. Rest pork and vegetables on a plate, covered, for 10 mins before serving.
  • Place the pan with juices over high heat and add vinegar. Bring to a boil, then simmer for 5 minutes or until the sauce thickens.
  • Season the pork, apples, and plums, then drizzle with the sauce and serve with steamed broccolini.
