Delicious Italian skillet chicken served over linguine, ready in just 25 minutes for a fantastic dinner.
Ingredients:
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 large plum (Roma) tomato, cut into 8 thin slices
  • 1/2 cup shredded mozzarella cheese (2 oz)
  • 1/4 cup chopped fresh basil leaves
  • Hot cooked linguine, if desired
Instructions:
  • Place a chicken breast between two sheets of plastic wrap or waxed paper and pound it gently with a meat mallet or rolling pin until it's about 1/2 inch thick. In a small bowl, combine Italian seasoning, salt, and lemon peel, then rub the mixture evenly over the smooth side of the chicken.
  • Heat oil and vinegar in a 10-inch nonstick skillet over medium-high heat. Place seasoned chicken in the skillet, season side down. Cook for 8 to 10 minutes, flipping once, until chicken is no longer pink in the center.
  • Lower the heat to a gentle simmer. Place 2 tomato slices and 2 tablespoons of cheese on each chicken breast. Cover and let them cook for 2 minutes until the cheese is melted. Sprinkle with fresh basil and serve alongside linguine.
