Caprese chicken: Spinach and cheese stuffed, tomato topped, balsamic drizzled. Easy, Italian-inspired.
Ingredients:
  • 1 teaspoon butter, or as needed
  • 2.5 cups shredded mozzarella, divided
  • 0.25 cup grated Parmesan cheese
  • 1 (8 ounce) package fresh spinach, chopped
  • 0.5 (8 ounce) package cream cheese, at room temperature
  • 0.5 teaspoon garlic powder
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 1 pinch lemon-pepper seasoning, or to taste
  • 2 medium tomatoes, thinly sliced
  • 2 tablespoons balsamic vinaigrette dressing, or to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and grease a 9x13-inch glass baking pan with butter.
  • In a medium bowl, blend together 1/4 cup mozzarella cheese, Parmesan cheese, chopped spinach, cream cheese, and garlic powder until well mixed.
  • Make a pocket in each chicken breast by slicing it lengthwise on the side, ensuring not to cut through completely. Fill each breast with a mixture of cheese and spinach, securing the pocket with 2 to 3 toothpicks. Season with lemon-pepper, then transfer to the baking pan.
  • Place in the hot oven for 30 minutes, allowing the irresistible cheese and spinach mixture to ooze out slightly without worry.
  • Take out of the oven, add tomato slices and the rest of the mozzarella. Drizzle with balsamic vinaigrette and bake until chicken is fully cooked and the cheese on top is golden and bubbly, about 10 to 15 minutes longer.
