Caprese Stuffed Chicken: Chicken breasts filled with tomato, mozzarella, and pesto, baked to perfection for an effortless and flavorful meal.
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1 large tomatoes, chopped
  • 1 (8 ounce) package fresh mozzarella cheese, cut into small rounds
  • 8 tablespoons pesto, or to taste
  • 1 tablespoon cantanzaro herbs (such as Savory Spice Shop®)
  • 1.5 teaspoons garlic salt
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C), then carefully create a shallow pocket in each chicken breast with a sharp knife.
  • Fill each chicken breast with diced tomatoes, sliced mozzarella, and approximately 2 tablespoons of pesto. Combine cantanzaro herbs and garlic salt in a small bowl, then evenly sprinkle the herb mixture over each chicken breast.
  • Roast in the oven until the chicken is fully cooked through and the juices run clear, around 40 minutes. Check with an instant-read thermometer - it should register at least 165 degrees F (74 degrees C) in the center.
