Create delectable stuffed caprese chicken for a memorable meal that wows guests and family alike with minimal preparation.
Ingredients:
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon sea salt
  • 4 chicken breasts, pounded flat
  • 0.5 cup balsamic vinegar
  • 1 cup fresh basil leaves
  • 1 (8 ounce) package mozzarella cheese, sliced
  • 2 large Roma tomatoes, sliced
Instructions:
  • Combine 1/4 cup of olive oil with garlic, onion powder, pepper, and salt in a bowl. Pour the marinade over chicken breasts in a shallow dish. Chill in the fridge for a minimum of 4 hours.
  • Heat balsamic vinegar in a small saucepan over medium heat until it simmers gently. Cook for about 15 minutes, keeping a close eye to avoid scorching. Let it reduce by half. Take it off the heat and cool to room temperature before using.
  • Preheat the oven to 400 degrees F (200 degrees C). Take the chicken out of the marinade, shake off any extra, and discard the rest of the marinade.
  • Evenly arrange the basil, mozzarella cheese, and tomato slices on each piece of chicken. Roll up the chicken and secure with toothpicks.
  • In an oven-safe skillet, warm olive oil over medium heat. Sear stuffed chicken breasts until golden brown on each side, about 3 to 4 minutes per side.
  • Place the skillet in the preheated oven and bake for about 10 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
  • Let the stuffed chicken breasts rest for 5 minutes, then finish with a drizzle of balsamic reduction before serving.
