Marinate chicken in zesty Italian dressing, sear, then bake with gooey mozzarella and fresh tomatoes. Top with basil and balsamic for a flavorful meal - perfect for a busy day!
Ingredients:
  • 4 (6 ounce) skinless, boneless chicken breast halves
  • 1 cup Italian salad dressing
  • 1 tablespoon Italian herb seasoning
  • 1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)
  • 2 tablespoons canola oil
  • 4 (1/2 inch thick) slices fresh mozzarella cheese
  • 4 (1/2 inch thick) slices tomato
  • 4 large fresh basil leaves
  • 1 tablespoon balsamic vinegar
Instructions:
  • Add chicken breasts, Italian salad dressing, Italian herb seasoning, and chicken seasoning to a resealable plastic bag. Massage the chicken to coat it evenly, remove excess air, seal the bag, and refrigerate for 4 to 6 hours.
  • Preheat your oven to a piping hot 500 degrees F (260 degrees C).
  • Heat canola oil in a large cast iron or ovenproof skillet over medium-high heat until a small droplet of water pops in the oil. Remove chicken breasts from marinade, discard marinade, and place chicken breasts into the hot oil. Fry for 2 minutes on each side.
  • Bake in preheated oven until chicken is cooked through, about 12 minutes. Top each chicken breast with mozzarella and tomato slices before serving.
  • Place the dish back in the oven until the cheese is gooey and melted, about 3 to 5 minutes. Then, move the chicken to a serving plate and garnish each piece with a fresh basil leaf and a splash of balsamic vinegar.
