Try this quick and flavorful 30-minute skillet caprese chicken for a delicious dinner anytime of the year!
Ingredients:
  • 2 pounds boneless skinless chicken breasts, cut in half lengthwise
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons unsalted butter, divided
  • 1 medium yellow onion, finely chopped (about 3/4 cup)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1/2 cup chicken stock
  • 1/3 cup balsamic vinegar
  • 1 cup cherry tomatoes
  • 1 tablespoon Italian seasoning
  • 8 ounces whole milk fresh mozzarella pearls, drained
  • 1/4 cup chopped fresh basil leaves
Instructions:
  • Season chicken breasts with salt and black pepper. Heat olive oil and butter in a large skillet until shimmering. Cook chicken in skillet for 4-5 minutes per side until golden brown and cooked through. Use tongs to flip. Transfer cooked chicken to a plate and tent with foil to keep warm.
  • Start by sizzling the onions until they just start to soften, for about 3 minutes. Then, introduce the garlic and continue sautéing for an additional minute.
  • Enhance the flavors: Pour in the chicken stock and balsamic vinegar, then deglaze using a wooden spoon to scrape off the flavorful brown bits. Let it simmer until reduced by half, thickening the sauce slightly, about 5 to 6 minutes.
  • Stir in cherry tomatoes, Italian seasoning, 1/4 teaspoon salt, and black pepper. Cook for 2 to 3 minutes until tomatoes start to soften. Finish by stirring in 1 tablespoon butter until melted.
  • Incorporate the cooked chicken with its drippings into the sauce, spoon some tomatoes and sauce on top, then sprinkle the mozzarella over it. Cover the skillet to melt the cheese, about 4 minutes.
  • Enjoy warm: Sprinkle basil on top before serving. Refrigerate any extras for up to 3 days; avoid freezing due to fresh mozzarella and tomatoes. To reheat, microwave in 30-second intervals until chicken is just warmed through. Another option is to transfer chicken to a skillet, top with leftover sauce, and heat on the stovetop over medium heat. Add chicken stock to sauce if needed to thin.
