Try this vibrant Chicken Caprese Bake for a delicious midweek meal.
Ingredients:
  • 1/2 bunch fresh oregano
  • 27.30 gm olive oil
  • 6 chicken thigh cutlets, skin on
  • 4 roma tomatoes, halved
  • 4 garlic cloves, peeled
  • 125.00 ml pitted Sicilian olives
  • 125g tub large bocconcini, torn
Instructions:
  • Preheat the oven to 200°C (180°C fan-forced).
  • Finely chop half of the oregano and leave the rest as sprigs. Heat 2 teaspoons of oil in a non-stick frying pan over medium-high heat. Cook the chicken for 3 to 4 minutes on each side until golden brown. Transfer the chicken to a baking dish and drizzle with the remaining oil. Sprinkle the chopped oregano on top, season with salt and pepper, and bake for 20 minutes.
  • Place tomatoes and garlic around the chicken, spoon pan juices over the top. Bake for an additional 20 minutes until chicken is fully cooked and tomatoes begin to soften. Sprinkle with olives and bake for another 5 minutes until heated through. Finish by sprinkling with bocconcini and remaining oregano. Serve and enjoy!
