Garlic-Butter Orzo Chicken Casserole

Prepare a flavorful Caprese-inspired chicken casserole in just 20 minutes. Coat chicken with olive oil, Italian seasoning, and red pepper flakes. Bake on garlicky orzo and tomatoes, sealed with foil for concentrated flavors. Enjoy the delicious aroma and taste!
Ingredients:
  • 1 cup uncooked orzo or rosamarina pasta
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 2 tablespoons butter, melted
  • 4 cloves garlic, finely chopped
  • 1/4 teaspoon black pepper
  • 2 cups halved cherry tomatoes
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 4 boneless skinless chicken breasts (6 to 8 oz each)
  • 1 cup shredded mozzarella cheese (4 oz)
  • 2 tablespoons thinly sliced fresh basil leaves
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray. Evenly spread the uncooked orzo in the baking dish.
  • Combine broth, rich melted butter, fragrant garlic, a touch of salt, and freshly ground black pepper with orzo in a baking dish. Gently stir the ingredients together before evenly layering the vibrant tomatoes on top.
  • In a spacious bowl, combine oil, Italian seasoning, 1/4 teaspoon salt, and red pepper flakes. Add chicken and coat evenly. Place the chicken on top of the tomatoes, cover with foil, and bake for 55 to 65 minutes until the chicken juices run clear at the thickest part and both the chicken and mixture reach a minimum temperature of 165°F.
  • Uncover the chicken and generously sprinkle with mozzarella cheese. Bake for 5 to 7 minutes until the cheese is melted. Finish by topping with fresh basil leaves.
