Transform leftover chicken into a cozy winter soup with fennel and orzo.
Ingredients:
  • 8 cups reduced-sodium chicken broth
  • salt and ground black pepper to taste
  • 4 medium carrots, chopped
  • 1 bulb fennel, chopped
  • 1 cup uncooked orzo pasta
  • 2 cups chopped cooked chicken breast
  • 0.25 cup fresh lemon juice
  • 3 tablespoons chopped fresh dill
Instructions:
  • In a large soup pot, bring chicken broth, salt, and pepper to a boil over high heat. Add carrots, fennel, and orzo and bring back to a boil. Simmer on low heat, partially covered, until orzo and vegetables are tender, for about 8 to 10 minutes. Finally, stir in chicken and cook until heated through, approximately 5 minutes.
  • Take the pot off the heat and incorporate the vibrant flavors of lemon juice and fresh dill.
