Whip up a quick and delicious Chicken Orzo Soup with tender chicken, pasta, and veggies in just 30 minutes. A family favorite!
Ingredients:
  • 1 carton (32 oz) Progresso™ chicken broth (4 cups)
  • 1 lb boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 1/2 cup sliced carrots
  • 1/2 cup chopped celery
  • 3/4 cup uncooked orzo or rosamarina pasta (4 1/2 oz)
  • 2 cups water
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
Instructions:
  • In a 3-quart saucepan, bring the broth and chicken to a boil. Reduce heat and simmer uncovered for about 10 minutes, ensuring the chicken's juices run clear when the thickest part is cut (minimum 165°F). Transfer the chicken to a cutting board and skim any excess fat from the broth, if needed.
  • In a 10-inch skillet, heat oil over medium heat and sauté onion, carrots, and celery until tender, stirring occasionally.
  • Combine the cooked vegetables, pasta, and water with the broth in a saucepan. Bring to a boil, then lower the heat and simmer uncovered for 8 to 10 minutes until the pasta is tender.
  • Dice chicken into bite-size pieces. Stir in the chicken and parsley into the soup and heat until it is piping hot. Season with salt and pepper to taste.
