Vegetarian chicken orzo soup with root vegetables is comforting and perfect for chilly nights.
Ingredients:
  • 8 cups vegetable broth (such as Emeril's®)
  • 1.5 cups water
  • 1 medium yellow onion, chopped
  • 1 turnip, peeled and cubed
  • 1 parsnip, cubed
  • 2 medium carrots, cubed
  • 2 stalks celery with leaves, chopped
  • 2 sprigs fresh parsley, chopped
  • 2 sprigs fresh dill, chopped
  • 1 (12 ounce) package artificial chicken pieces (such as Quorn™)
  • 1.5 pounds escarole, chopped
  • 1.3333333730698 cups uncooked orzo pasta
  • salt and ground black pepper to taste
Instructions:
  • In a pot, simmer 2 cups of broth over medium heat with onions for 4 to 5 minutes. Add the remaining broth, water, and all the vegetables and herbs. Continue to cook over medium heat for 1 hour.
  • Add the vegetarian chicken pieces and cook until warmed through and vegetables are tender, around 30 minutes. Mix in escarole and orzo, and simmer for an additional 15 minutes.
  • Refine the flavor by reintroducing the vegetarian chicken chunks to the pot, then season with a sprinkle of salt and pepper before serving.
