Chicken-free chicken parmigiana

Exciting new Chicken Free Chicken from Coles inspired this delicious vegetarian "chicken" parmigiana - a perfect meat-free alternative packed with flavor.
Ingredients:
  • 25g (1/2 cup) panko breadcrumbs
  • 40g (1/2 cup) finely grated vegetarian parmesan
  • 250.00 ml fresh basil leaves, finely chopped, plus extra baby basil leaves, to serve
  • 2 eggs, lightly whisked
  • 50g (1/3 cup) plain flour
  • 300g pkt Sunfed Chicken Free Chicken Wild Meaty Chunks (see note)
  • 60ml (1/4 cup) olive oil
  • 2 x 400g cans cherry tomatoes
  • 1 7’s Chicken Style Stock Cube
  • 100g fresh mozzarella, torn
Instructions:
  • Preheat the grill on high. Mix breadcrumbs, vegetarian parmesan, half of the garlic, and half of the basil on a plate. Put the egg in a bowl and the flour on another plate, both seasoned. Coat the "Chicken Free Chicken" in flour, then egg, then breadcrumb mixture, pressing gently to cover evenly.
  • Place on a tray and cover with plastic wrap before chilling in the fridge.
  • Heat 2 1/2 tablespoons of oil in a 26cm ovenproof frying pan over medium heat. Cook the Chicken Free Chicken for 1-2 minutes per side until golden brown. Place on paper towel to drain.
  • Wipe the pan with paper towel, then heat the remaining oil over medium heat. Sauté the remaining garlic for 1 minute. Add cherry tomatoes, 80ml (1/3 cup) water, and stock cube. Simmer for 5 minutes until slightly reduced. Stir in the rest of the basil, then season to taste.
  • Lay the Chicken Free Chicken on the pan sauce, drizzle sauce over each piece, then add mozzarella on top. Broil for 5-8 minutes until the cheese is bubbly and golden. Garnish with fresh baby basil leaves before serving.
