Crispy oven-baked chicken thighs with seasoned panko - a quick, budget-friendly weeknight delight!
Ingredients:
  • 2 cups all-purpose flour
  • 2 pinches cayenne pepper, divided, or to taste
  • 2 pinches garlic powder, divided, or to taste
  • 3 large eggs
  • 2 cups panko bread crumbs
  • 6 chicken thighs
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking pan by lining it with parchment paper.
  • In a shallow bowl, mix flour, a pinch of cayenne, a pinch of garlic powder, salt, and pepper. In a separate bowl, beat the eggs. In a third bowl, combine panko bread crumbs with the remaining pinch of cayenne, remaining pinch of garlic powder, salt, and pepper.
  • Coat chicken thighs in flour, then dip in beaten egg and press into panko to cover both sides. Place breaded chicken in pan.
  • Bake in the preheated oven for about 40 minutes until golden brown, and chicken thighs are no longer pink in the center. Use an instant-read thermometer near the bone to ensure it reads 165 degrees F (74 degrees C).
