Oven-baked bolognese with pancetta and herbs: A delicious new family favorite twist on a classic dish.
Ingredients:
  • 30g unsalted butter
  • 200g piece pancetta, finely chopped
  • 1 large onion, finely chopped
  • 2 celery stalks, finely chopped
  • 1 small carrot, finely chopped
  • 2 garlic cloves, finely chopped
  • 500g beef mince
  • 500g pork mince
  • 500ml milk
  • 1/4 tsp freshly grated nutmeg
  • 375ml red wine
  • 800g canned chopped tomatoes
  • 500ml beef stock
  • 2 bay leaves
  • 40.00 ml chopped basil leaves
Instructions:
  • Preheat your oven to 160°C for the perfect cooking temperature.
  • In a large flameproof casserole, melt the butter and olive oil over medium heat. Cook the chopped pancetta for 3-4 minutes until it crisps. Add the onion, celery, carrot, and garlic, and cook for 5 minutes until softened. Add the beef and pork mince, breaking it up with a wooden spoon, and cook for 8-10 minutes until browned.
  • Combine the milk and nutmeg and simmer until the milk evaporates. Stir in the tomato paste until combined, then add the wine and simmer for 10 minutes. Mix in the canned tomatoes, stock, and herbs. Season with salt and pepper. Cover and bake for 2 hours until thickened. Remove any fat from the surface and serve with pasta.
